Bouin, Breton-Vendée Marsh village

Commune of around 2,300 in North Vendée, at the edge of the Breton-Vendée Marsh near Bourgneuf Bay. Unique history: long an island, Bouin was attached to the mainland by sea-reclamation and dikes. Vast territory: salt meadows (famed lamb), oyster farming (Bouin oysters), polder crops, fishing ports (Port des Champs, Port des Brochets).

Bouin produces some of the best Atlantic oysters ('Bouin oysters') and its salt-meadow lamb has serious gastronomic standing. Famed salt marshes and polder landscapes are quintessential Vendée-North coast.

Unusual place: you don't see the sea from the village (set back), but it's omnipresent in landscape, climate, economy. Discover the ports and salt meadows via polder paths on foot or by bike.

Taste Bouin oysters at a port oyster shack. Visit the Rairé windmill (still active). Beauvoir-sur-Mer salt marshes. The Gois Passage (tidal road to Noirmoutier) 15 min. For birders, salt meadows host many migrating species.
