Saint-Affrique, a sub-prefecture of southern Aveyron with about 9,000 inhabitants, derives its name from Africanus, a bishop of Comminges in the 6th century. The town developed at the foot of the Caylus rock, a rocky peak culminating at 519 meters, which was the first inhabited site of the commune, occupied since prehistoric times and then crowned in the 11th century by the castle of the Counts of Caylus, destroyed in 1238. The name "Caylus" comes from the Occitan Castel Lucius, the "castle of light".
The town preserves a rich architectural heritage: the Notre-Dame church with its neo-Gothic spire of over 70 meters, the medieval Pont Vieux (Old Bridge) classified as a Historic Monument since 1886, the Théron and del Bastié towers, remnants of the fortifications. The public garden, adorned with the equestrian statue of General de Castelnau, a native of the town, offers a green setting in the heart of the town, ideal for hosting the summer flea market.
Located 30 kilometers from Millau and 1 hour 30 minutes from Albi, Saint-Affrique is the gateway to the Pays de Roquefort (Roquefort Region), a territory where the famous cheeses are made and aged in the natural caves of the Combalou cliffs.
